Baby Pumpkin & Broccoli Shrimp Platter 🍤

Ingredients:
1/2 baby pumpkin 🎃
1/2 head of broccoli 🥦
6–8 shrimp 🍤
2 eggs 🥚
3–4 button mushrooms 🍄
A handful of corn kernels 🌽

How to make it:
Roast the pumpkin – Cut the baby pumpkin into pieces, brush lightly with olive oil, and roast at 180°C (350°F) for about 20 minutes until golden and fragrant.
Blanch the veggies – Boil broccoli, corn, and mushrooms for about 1 minute, then rinse under cold water to keep them crisp and bright.
Cook the shrimp & eggs – Boil or lightly pan-fry the shrimp until just cooked; make soft-boiled or hard-boiled eggs to your liking.
